rainbow asian slaw

I absolutely love coleslaw! And am always eager to try a new and different recipe. This coleslaw recipe comes from the blog, Heat Oven to 350, (originally adapted from Once Upon A Chef). Nicole, author of Heat Oven to 350 loves colorful salads like this one, thus the salad's name. She says, "It's one of those all-around winner recipes that you keep in your recipe box and make again and again."

And she's right on. I brought it to a family potluck the other night and several asked me for the recipe. It is so yummy, a wonderful combination of flavors. It would also be great with rotisserie chicken pieces in it for a heartier salad!

FYI. The dressing is very light and a bit runny, so next time serve it with a slotted spoon. Also, let the salad sit in the dressing a little longer before serving to soak up some of the juices. I would also sprinkle some toasted sesame seeds on top.
